Ingredients
1 tbsp butter
Small shallot finely chopped
2 tbsp of whiskey mustard
Salt and pepper
Juice of half a lemon
1 cup of cream
Small handful of tasty cheese, to taste
Directions
1. Gently fry shallot off in butter under medium heat
2. Add cream and 2 tbsp mustard. Simmer for 10 minutes or until sauce is slightly reduced and has thickened nicely.
3. Add a handful of cheese and stir until dissolved
4. Season with salt, pepper and a squeeze of lemon juice
